  1. Prepare Your Ingredients: Make sure your egg is at room temperature. This helps emulsify the ingredients more effectively. Measure out the mustard, lemon juice, and oil. To be honest, I never measure and pretty much. always eye ball it.

  2. Blend: In a wide mouth mason jar, add the egg, salt, mustard, and lemon juice. Then top with oil until it reaches the 1 cup line. Blend on low speed on the bottom of the jar ONLY, until well combined.

  3. Slowly Blend: Slowly lift the immersion blender (only after the mayo forms on the very bottom of the jar) until all the oil is incorporated. This gradual blending from bottom to top is crucial for achieving the right consistency. You'll notice the mixture thickening and emulsifying.

  4. Transfer and Store: Transfer the homemade mayo to a clean jar or airtight container. Store it in the refrigerator for up to one week.

Tips for Success:
